Ingredients

  • 3 large egg whites (room temperature)
  • ¾ cup granulated sugar
  • 1 tbsp cornstarch
  • 1 cup heavy cream, cold
  • 2 cups fresh berries (strawberries, blueberries, raspberries)
  • 1 tbsp powdered sugar

    Beat egg whites with a pinch of salt until soft peaks form, about 2 minutes.

    Gradually add granulated sugar while beating until stiff, glossy peaks form, ~3 minutes more.

    Fold in cornstarch gently with a spatula until just combined—no streaks.

    Dollop 4 mounds of meringue onto a parchment-lined plate, swirl into nest shapes with the back of a spoon.

    Freeze meringue nests for 10 minutes until firm but still fresh.

    Whip cold cream with powdered sugar until stiff peaks form, ~2 minutes.
