Ingredients
- 4 layers store-bought plain cake layers (4 rounds, ~8 oz each)
- 2 cups heavy whipping cream
- ½ cup powdered sugar
- 4 colors gel food coloring (red, yellow, green, blue)
- 1 tsp vanilla extract
- ¼ cup rainbow sprinkles or edible pearls (optional)

Pour heavy cream into a bowl. Beat with an electric mixer until soft peaks form, ~2 minutes.

Add powdered sugar and vanilla extract. Beat until stiff peaks form, ~2 minutes more.

Divide frosting into 4 small bowls. Add a different gel color to each bowl and stir until smooth.

Place first cake layer on a cake stand or plate. Spread 2 tbsp red frosting evenly on top.

Stack second layer on top. Repeat with yellow frosting, then green, then blue between remaining layers.

Frost the outside with any remaining frosting. Sprinkle with rainbow decorations if desired.
