Ingredients
- 1 package (8 biscuits) buttermilk biscuits (canned or refrigerated dough)
- 2 cups neutral cooking oil
- ½ cup jam or fruit filling (apricot, plum, or raspberry)
- ½ cup powdered sugar
- 2 tbsp butter
Instructions
- 1
Heat oil in a deep skillet or pot to 350°F. If you don't have a thermometer, test with a biscuit piece—it should sizzle immediately and float.
- 2
Separate biscuits and flatten each one gently into a 3-inch round. Place 1 tbsp jam in the center of half the biscuits.
- 3
Top jam-filled biscuits with unfilled ones, then pinch edges firmly to seal—no leaks, or filling escapes into oil.
- 4
Fry donuts 90 seconds per side until deep golden brown. Use a slotted spoon to flip and remove them.
- 5
Drain on paper towels. While still warm, brush lightly with melted butter, then dust generously with powdered sugar.
- 6
Serve warm with coffee. Powdered sugar will dust your hands—have napkins ready.
Tools you’ll need
- deep skillet or heavy-bottomed pot (3-quart minimum)
- cooking thermometer or kitchen timer
