Ingredients

  • ½ lb pork tenderloin or thin cutlets
  • 3 tbsp miso paste (white or red)
  • 2 tbsp butter
  • 1 tbsp soy sauce
  • 6 oz ramen noodles (fresh or instant)
  • ½ cup corn kernels (fresh, frozen, or canned)

Instructions

  1. 1

Bring 4 cups water to a rolling boil in a large pot over high heat.

  2. 2

While water heats, slice pork thinly against the grain into 1/8-inch strips.

  3. 3

Slide pork into boiling water. Stir gently and cook for 60 seconds until edges turn pale, then fish out with a slotted spoon.

  4. 4

Drop ramen noodles into the same boiling water. Stir and cook per package instructions (usually 3 minutes for fresh, 4 for instant).

  5. 5

Whisk miso paste + butter + soy sauce in a small bowl until smooth, then stir into the hot broth just before noodles finish.

  6. 6

Divide noodles and broth between two bowls. Top with cooked pork, corn, and green onion if you have it. Serve immediately.
