Ingredients

  • 8 oz pork loin or tenderloin, thinly sliced
  • 3 tbsp miso paste (red or white)
  • 4 cups dashi or chicken broth
  • 8 oz ramen noodles (fresh or instant)
  • ¾ cup corn kernels (fresh or frozen)
  • 2 tbsp butter

Instructions

    Bring broth to a boil in a large pot over high heat, then reduce to medium.

    Whisk miso paste into a small bowl with 1/4 cup warm broth until smooth, then stir back into the pot.

    Add ramen noodles to the pot and cook until tender, ~3-4 minutes, stirring occasionally.

    While noodles cook, sear pork slices in a skillet over medium-high until light golden, ~2 minutes per side.

    Stir corn and butter into the broth until butter melts and corn is heated through, ~60 seconds.
