Minestrone

Ingredients

  • 2 tbsp olive oil
  • 1 can (14.5 oz) diced tomatoes (canned)
  • 4 cups vegetable broth
  • 1 can (15 oz) white beans (canned, drained)
  • ½ cup small pasta (ditalini or shells)
  • 2 cups fresh spinach, chopped

Instructions

    Heat olive oil in a large pot over medium-high heat until shimmering, about 1 minute.

    Add canned tomatoes (with juice), broth, and beans. Bring to a boil, stirring occasionally, about 3 minutes.

    Add pasta and a pinch of salt. Stir and simmer until pasta is al dente, about 6 minutes.

    Fold in spinach and stir until wilted, about 1 minute.

    Taste and season with salt and pepper. Serve hot in bowls.
