Ingredients
- 10 oz beef sirloin or ribeye, thinly sliced
- 1 medium yellow onion, sliced thin
- 3 tbsp soy sauce
- 3 tbsp mirin (or 1 tbsp honey + 2 tbsp water)
- 1.5 cups cooked white rice
- 2 whole eggs

Bring a small pot of water to a boil. Lower eggs in gently and set a timer for 6 minutes for jammy yolks.

Heat 1 tbsp neutral oil in a skillet over medium-high. Add sliced onion and cook until softened, about 3 minutes.

Add beef slices, breaking them apart as they cook, until no pink remains, about 2 minutes.

Pour in soy sauce and mirin. Simmer for 1 minute until the sauce coats the beef and onions glossy.

Divide rice between two bowls. Top each with beef and onion mixture, then pour any remaining sauce over.

Place a soft-boiled egg on top of each bowl. Crack gently to reveal the runny yolk. Serve immediately.
