Ingredients

  • 1 loaf (about 16 oz) store-bought pound cake
  • 2 cups heavy whipping cream
  • ¼ cup powdered sugar
  • 4 drops each, or to taste food coloring (red, yellow, blue, green)
  • 1 tsp vanilla extract
  • 2 tbsp sprinkles (optional rainbow or nonpareils)

Instructions

  1. 1

Whip heavy cream, powdered sugar, and vanilla until stiff peaks form, about 2 minutes.

  2. 2

Divide whipped cream into 4 bowls. Add one food coloring shade to each bowl; fold gently until uniform.

  3. 3

Slice pound cake horizontally into 4 thin layers (about 3/4-inch thick per slice).

  4. 4

Spread first cake layer with red whipped cream, top with second layer, spread yellow cream, continue with blue and green.

  5. 5

Frost top and sides with any remaining whipped cream. Top with sprinkles if desired.

  6. 6

Chill until serving, or slice and serve immediately for a soft, custardy crumb.
