Ingredients
- 1 whole cake (8–10 oz) store-bought vanilla layer cake (or pound cake)
- 1.5 cups heavy whipping cream
- 3 tbsp powdered sugar
- 1 set food coloring (gel or liquid, assorted colors)
- ½ tsp vanilla extract
- 8 oz per serving black coffee (brewed, any strength)

Cut the cake into 1/2-inch cubes — you'll need roughly 2 cups total.

Pour heavy cream into a bowl with powdered sugar and vanilla; whip until soft peaks form, about 90 seconds by hand or 60 seconds with a mixer.

Divide the whipped cream into 5 small bowls. Add 2–3 drops of food coloring (red, orange, yellow, green, blue) to each bowl and stir until uniform.

In a tall glass or jar, layer cake cubes and colored whipped cream in rainbow order, starting with red at the bottom.
