Ingredients

  • 2 oz sausage (cooked or uncooked)
  • 2 large egg
  • 1 tbsp butter

Instructions

    Cook sausage in a nonstick skillet over medium-high until browned, 3–4 minutes; set aside.

    Add butter and melt, then pour in eggs and let sit 30 seconds until bottom starts to set.

    Gently push cooked edges toward center, tilting the skillet so raw egg flows to the edges.

    When surface looks mostly set but still shiny, scatter sausage on one half.

    Fold omelet in half and slide onto a plate immediately.
