Ingredients

  • 6 oz pork belly, sliced 1/4-inch thick
  • 3 tbsp white miso paste
  • 4 cups dashi powder or vegetable broth
  • 6 oz fresh ramen noodles
  • 2 whole eggs
  • 2 tbsp scallions, sliced

Instructions

    Boil 4 cups dashi in a large pot or deep skillet. Whisk miso paste with 1/4 cup hot broth to dissolve, then stir into the pot.

    While broth simmers, heat a separate skillet over medium-high. Sear pork belly 2 minutes per side until edges crisp and center browns.

    Add ramen noodles and eggs to the broth. Simmer until noodles soften, ~3 minutes, and egg whites set but yolks jiggle.
