Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ¾ cup water
  • 2 tbsp vegetable oil
  • 1 whole lime

Instructions

    In a large bowl, whisk together the 2 cups flour, 1 tsp baking powder, 1/2 tsp baking soda, and 1/2 tsp salt.

    Add the 3/4 cup water and 2 tbsp vegetable oil to the dry ingredients. Mix with a spatula until a shaggy dough forms.

    Turn the dough onto a floured surface and knead until smooth, about 5 minutes. Cover with a damp cloth and rest for 30 minutes.

    Roll the dough into a 1/4-inch thick rectangle. Cut into 1-inch wide strips. Stack two strips and press a chopstick down the center to seal.

    Heat 2 inches of oil in a wok or deep skillet to 375°F. Stretch each dough piece gently and slide into the hot oil.

    Fry the youtiao, turning often, until golden brown and puffed, about 2-3 minutes per side. Drain on paper towels.
