Ingredients
- ½ lb ground beef (80/20)
- ½ tsp kosher salt
- ¼ tsp black pepper
- 4 strips bacon strips
- 2 slices cheddar cheese slices
- 2 buns brioche burger buns
- 3 tbsp BBQ sauce
- 1 tbsp butter
- 2 leaves lettuce leaves
- 2 slices tomato slices
- 2 slices red onion slices

Cook bacon strips in a 12-inch cast iron skillet over medium heat until crispy, about 8 minutes. Transfer to a paper towel-lined plate.

Divide ground beef into 2 equal portions and gently form into patties about 0.75 inches thick. Make a small indent in the center of each patty with your thumb. Season both sides generously with salt and pepper.

Increase skillet heat to medium-high. Once hot, carefully place patties in the skillet and cook without moving them for 3-4 minutes until a brown crust forms.

Flip patties and cook for another 2-3 minutes for medium doneness. In the final minute, top each patty with a cheddar slice and 2 bacon strips. Cover with a lid to help melt the cheese.

Reduce heat to low and lightly butter the cut sides of the brioche buns. Toast them in the skillet for 1-2 minutes until golden.

Place lettuce on the bottom bun of each burger. Layer with tomato and red onion slices.

Place the cooked patty with cheese and bacon on top of the vegetables. Drizzle 1.5 tbsp BBQ sauce on the top bun and place it on the burger.
