Ingredients
- 4 chops pork chops (1 inch thick)
- 2 stalks lemongrass stalks, white parts only, minced
- 4 cloves garlic, minced
- 3 tbsp fish sauce
- 2 tbsp brown sugar
- 2 tbsp lime juice
- 2 tbsp olive oil
- 1 pinch salt and pepper

Mix lemongrass, garlic, fish sauce, brown sugar, lime juice, and olive oil in a bowl until combined.

Pat pork chops dry with paper towels. Season both sides with salt and pepper.

Rub marinade all over pork chops. Marinate at room temperature for 15 minutes.

Heat grill to medium-high. Oil grates to prevent sticking.

Grill pork chops 4–5 minutes per side without moving until caramelized and internal temp reaches 145°F.
