Vietnamese Beef Fried Rice

Ingredients
- 3 cups cooked rice
- ½ lb beef sirloin
- 2 large eggs
- 4 stalks green onions
- 2 tbsp soy sauce
- 3 tbsp vegetable oil
- ½ tsp salt
- ¼ tsp black pepper

Slice the 0.5 lb beef sirloin thinly against the grain, then season with 0.25 tsp salt and 0.125 tsp black pepper. Set aside.

Heat 1 tbsp vegetable oil in a large skillet or wok over high heat. Add the beef and stir-fry until browned and just cooked through, about 2-3 minutes. Remove and set aside.

Reduce heat to medium, add 1 tbsp vegetable oil. Crack the 2 eggs into the pan and scramble until just set, about 1 minute. Remove and set aside with the beef.

Add the remaining 1 tbsp vegetable oil to the pan. Add the 3 cups cooked rice and spread it out. Let it fry undisturbed for 1-2 minutes to get some crispy bits, then stir-fry for 3-4 minutes until heated through.

Return the beef and eggs to the pan. Add the 2 tbsp soy sauce and the remaining 0.25 tsp salt and 0.125 tsp black pepper. Toss everything together for 1-2 minutes until well combined and hot.

Slice the 4 green onions thinly and stir them into the rice. Cook for another 30 seconds until fragrant, then serve hot.
