Ingredients

  • 1 loaf baguette
  • 1 medium carrot
  • 1 small daikon radish
  • 2 tbsp rice vinegar
  • ½ medium cucumber
  • ½ cup cilantro

Instructions

    Thinly slice the 1 carrot and 1 small daikon into matchsticks. In a bowl, toss with 2 tbsp rice vinegar and a pinch of salt; let sit while you prep the rest.

    Slice the 1 baguette lengthwise, leaving one side hinged. If you like, toast it in a dry skillet over medium heat until crisp, about 2 minutes per side.

    Drain the pickled vegetables. Slice the 0.5 cucumber into thin rounds. Spread the pickled carrot and daikon along the bottom half of the baguette.

    Layer the cucumber slices over the vegetables, then top with the 0.5 cup cilantro leaves. Close the sandwich, press gently, and slice in half to serve.

    For extra flavor, add sriracha or soy sauce to the pickling liquid if you have them.
