Ingredients

  • 2 large potatoes
  • 1 cup frozen mixed vegetables
  • 1 cup breadcrumbs
  • 1 large egg
  • ½ cup flour
  • ½ medium red onion
  • ¼ cup fresh herbs (parsley, chives)
  • 1 pinch salt and pepper

    Boil the 2 large potatoes in salted water until fork-tender, about 20 minutes. Drain and mash until smooth.

    Mix the mashed potatoes with 1 cup frozen mixed vegetables and season with salt and pepper. Shape into 4 oval croquettes.

    Set up a breading station: 0.5 cup flour in one bowl, 1 beaten egg in another, and 1 cup breadcrumbs in a third.

    Coat each croquette in flour, then egg, then breadcrumbs. Press gently to adhere.

    Heat 2 tbsp oil in a skillet over medium heat. Fry the croquettes until golden brown on all sides, about 8-10 minutes total.
