Ingredients
- 2 medium carrot
- 1 medium zucchini
- 1 medium onion
- ¼ cup chopped parsley
- 4 cups vegetable broth
- 2 tablespoons fried shallots
- ½ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- 1
Peel and slice the 2 carrots and 1 zucchini into thin rounds. Peel and thinly slice the 1 onion.
- 2
In a large pot, combine the sliced vegetables, 4 cups vegetable broth, and 0.5 teaspoon salt. Bring to a boil over high heat.
- 3
Reduce heat to low and simmer gently, uncovered, until vegetables are tender and broth is flavorful, about 20 minutes. The broth should be clear and aromatic.
- 4
Strain the broth through a fine-mesh sieve into a clean pot, pressing on the vegetables to extract all liquid. Discard the solids.
- 5
Season the consommé with 0.25 teaspoon black pepper and adjust salt to taste. Ladle into bowls.
- 6
Garnish each bowl with 0.25 cup chopped parsley and 2 tablespoons fried shallots before serving.
- 7
Serve hot, ensuring each bowl has a generous sprinkle of crispy shallots and parsley.
