  • 2 medium carrot
  • 1 medium zucchini
  • 1 medium onion
  • ¼ cup chopped parsley
  • 4 cups vegetable broth
  • 2 tablespoons fried shallots
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

    Peel and slice the 2 carrots and 1 zucchini into thin rounds. Peel and thinly slice the 1 onion.

    In a large pot, combine the sliced vegetables, 4 cups vegetable broth, and 0.5 teaspoon salt. Bring to a boil over high heat.

    Reduce heat to low and simmer gently, uncovered, until vegetables are tender and broth is flavorful, about 20 minutes. The broth should be clear and aromatic.

    Strain the broth through a fine-mesh sieve into a clean pot, pressing on the vegetables to extract all liquid. Discard the solids.

    Season the consommé with 0.25 teaspoon black pepper and adjust salt to taste. Ladle into bowls.
