Ingredients

  • 4 large flour tortillas
  • 1 tbsp olive oil
  • 1 bell pepper
  • 1 red onion
  • 1 can (15 oz) black beans
  • 1 cup shredded cheese
  • 1 cup guacamole
  • 1 cup green salsa

Instructions

    Warm the 4 tortillas in a dry skillet over medium heat for 30 seconds per side, until pliable. Set aside.

    Heat 1 tbsp olive oil in a large skillet over medium-high. Add 1 sliced bell pepper and 1 sliced red onion; cook until softened and lightly charred, about 5-7 minutes.

    Add the drained can of black beans and cook, stirring, until heated through, about 2 minutes. Season with salt and pepper.

    Divide the vegetable-bean mixture among the tortillas, top each with 1/4 cup shredded cheese, then fold in the sides and roll tightly.
