Ingredients
- 1 lb meat (such as chicken breast or beef sirloin)
- 1 medium zucchini
- 1 medium bell pepper
- 1 medium red onion
- 8 oz mushrooms
- 3 tbsp olive oil

Cut the 1 lb meat and the 1 zucchini, 1 bell pepper, and 1 onion into 1-inch chunks. In a bowl, toss everything with the 8 oz mushrooms, 3 tbsp olive oil, and a pinch of salt and pepper.

Thread the meat and vegetables onto skewers, alternating them. If using wooden skewers, soak them in water for 10 minutes first to prevent burning.

Preheat a grill or grill pan over medium-high heat. Cook the skewers for 10-12 minutes, turning occasionally, until the meat is browned and cooked through and the vegetables are charred at the edges.
