Ingredients
- 1.5 cups basmati rice
- ½ cup yellow lentils (moong dal), rinsed
- 2 medium carrots, diced small
- 1 cup frozen peas
- 1.5 tsp turmeric powder
- 3.25 cups vegetable broth or water

Heat 2 tbsp oil in a large pot over medium. Add diced carrots and cook, stirring, until edges soften, about 3 minutes.

Stir in turmeric, then add rinsed rice and lentils. Stir constantly until grains turn slightly opaque, about 2 minutes.

Pour in broth, season with salt and pepper, then stir once. Bring to a boil, cover, and reduce heat to low.

Simmer covered until rice and lentils are tender and liquid is absorbed, about 12 minutes.
