Ingredients

  • 1.5 cups basmati rice
  • ½ cup yellow lentils (moong dal), rinsed
  • 2 medium carrots, diced small
  • 1 cup frozen peas
  • 1.5 tsp turmeric powder
  • 3.25 cups vegetable broth or water

Instructions

    Heat 2 tbsp oil in a large pot over medium. Add diced carrots and cook, stirring, until edges soften, about 3 minutes.

    Stir in turmeric, then add rinsed rice and lentils. Stir constantly until grains turn slightly opaque, about 2 minutes.

    Pour in broth, season with salt and pepper, then stir once. Bring to a boil, cover, and reduce heat to low.

    Simmer covered until rice and lentils are tender and liquid is absorbed, about 12 minutes.

    Stir in frozen peas, cover, and let sit off heat for 2 minutes until peas are heated through.

    Fluff with a fork and serve hot.
