Ingredients

  • 2 tbsp olive oil
  • 1 tsp cumin seeds
  • ¾ cup red lentils
  • ¾ cup white basmati rice
  • ½ tsp turmeric powder
  • 1 whole lime (juiced)

Instructions

    Heat oil in a large pot over medium-high. Add cumin seeds and toast until fragrant, about 30 seconds.

    Pour in 2.5 cups water. Stir in lentils, rice, turmeric, and a pinch of salt. Bring to a boil.

    Lower heat to medium-low, cover, and simmer until rice and lentils are tender and liquid is absorbed, 14–16 minutes.

    Remove from heat. Fluff with a fork, then squeeze lime juice over the top and stir gently.

    Serve hot in bowls. Season with salt and pepper to taste.
