Ingredients

  • 4 pieces flatbread
  • 500 g beef or lamb strips
  • 1 cup plain yogurt
  • 2 medium tomato
  • 1 large green bell pepper
  • ½ cup fresh parsley
  • 1 medium lemon
  • 2 tbsp olive oil

Instructions

  1. 1

In a bowl, mix the 1 cup yogurt with juice of 1/2 lemon and a pinch of salt. Set aside.

  2. 2

Slice the 2 tomatoes and 1 bell pepper into thin strips. Chop the 1/2 cup parsley.

  3. 3

Heat 1 tbsp olive oil in a large skillet over high heat. Add the 500g meat strips in a single layer; cook without stirring for 2-3 minutes until browned, then flip and cook 2-3 minutes more until cooked through.

  4. 4

Warm the 4 flatbreads in a dry pan or microwave for 30 seconds each until pliable.

  5. 5

Spread a generous spoonful of yogurt sauce on each flatbread. Top with meat, tomato, pepper, and parsley.

  6. 6

Drizzle with remaining 1 tbsp olive oil and a squeeze of lemon. Roll tightly and serve immediately.

  7. 7

Optional: sprinkle with red pepper flakes or sumac for extra kick.
