Ingredients

  • 1 cup red lentils
  • 1 medium onion, roughly chopped
  • 4 cups vegetable broth
  • 2 tbsp butter
  • 1 tsp red pepper flakes
  • 1 whole lemon (halved)

Instructions

    Rinse red lentils in a fine-mesh sieve under cold water until water runs clear.

    Bring broth to a boil in a large pot. Add lentils and chopped onion.

    Reduce heat to medium-low and simmer 15 minutes until lentils break down completely.

    Blend soup with an immersion blender until smooth and creamy.

    Heat butter in a small skillet over medium. Add red pepper flakes and cook 30 seconds until fragrant.

    Pour butter-spice mixture into soup and stir. Season with salt and pepper to taste.
