Ingredients

  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 1 cup red lentils, rinsed
  • 4 cups vegetable broth
  • 1 tsp cumin
  • 1 whole lemon (juiced)

Instructions

    Heat olive oil in a pot over medium heat until it shimmers, about 60 seconds.

    Add diced onion and cook, stirring, until softened and translucent, 4–5 minutes.

    Stir in cumin and cook until fragrant, about 30 seconds.

    Pour in broth and add lentils. Bring to a boil, then lower heat and simmer.

    Simmer uncovered for 12–15 minutes until lentils break down into a creamy puree.
