Ingredients

  • ¾ cup red lentils (dried)
  • ¼ cup bulgur wheat
  • 3 tbsp fresh parsley, finely chopped
  • 1 whole lemon (zested + juiced)
  • 3 cup neutral oil for frying
  • 1 pinch salt and black pepper to taste

Instructions

  1. 1

Boil red lentils in 2 cups water until very soft, ~10 minutes. Drain well and transfer to a bowl.

  2. 2

Stir in bulgur, parsley, lemon zest, 1 tbsp lemon juice, and a pinch each of salt and pepper. Let sit 2 minutes to cool slightly.

  3. 3

Wet your hands and roll the mixture into 1.5-inch balls (you'll get 12–15). Place on a plate.

  4. 4

Heat oil in a deep skillet to 350°F. Test with a wooden spoon handle—it should sizzle immediately when dipped.

  5. 5

Fry balls 3–4 at a time until golden brown on all sides, ~4 minutes. Don't crowd the pan. Transfer to paper towels.

  6. 6

Drizzle with remaining lemon juice and serve warm. Pair with yogurt or eat plain.
