Ingredients
- ¾ cup red lentils (dried)
- ¼ cup bulgur wheat
- 3 tbsp fresh parsley, finely chopped
- 1 whole lemon (zested + juiced)
- 3 cup neutral oil for frying
- 1 pinch salt and black pepper to taste

Boil red lentils in 2 cups water until very soft, ~10 minutes. Drain well and transfer to a bowl.

Stir in bulgur, parsley, lemon zest, 1 tbsp lemon juice, and a pinch each of salt and pepper. Let sit 2 minutes to cool slightly.

Wet your hands and roll the mixture into 1.5-inch balls (you'll get 12–15). Place on a plate.

Heat oil in a deep skillet to 350°F. Test with a wooden spoon handle—it should sizzle immediately when dipped.
