Ingredients

  • 1 cup red lentils, rinsed
  • ½ cup bulgur, fine
  • 1.5 cups water
  • 1 whole lemon (juiced + zested)
  • ¼ cup red onion, minced
  • ¼ cup fresh parsley, finely chopped

Instructions

    Bring lentils and water to a boil, then reduce heat and simmer until lentils break down, about 6 minutes.

    Stir in bulgur, lemon juice, lemon zest, onion, and parsley. Cook 1 more minute until bulgur absorbs liquid.
