Turkish Coffee

Ingredients
- ½ cup water
- 1.5 tablespoon finely ground coffee
- 1 teaspoon sugar

In a small cezve or saucepan, combine 0.5 cup cold water, 1.5 tbsp finely ground coffee, and 1 tsp sugar (adjust to taste). Do not stir after this point.

Place the cezve over low heat. Heat gently until the coffee begins to foam and rise, about 3-4 minutes. Watch closely—the foam should form but not boil over.

Remove from heat just before it boils over. Spoon a little foam into each demitasse cup, then pour the remaining coffee gently into the cups, grounds and all.

Let the coffee sit for 1 minute to allow the grounds to settle. Serve immediately with a glass of water on the side.
