Tomato Sauce Pasta with Vegetables

A quick and comforting weeknight pasta tossed in a simple tomato sauce with sautéed onions and garlic, finished with herbs. Ready in about 20 minutes using pantry staples.

Ingredients

  • 8 oz rotini pasta
  • 2 tbsp olive oil
  • 1 medium onion
  • 2 cloves garlic
  • 1 can (15 oz) canned crushed tomatoes
  • 1 tsp dried Italian herbs

Instructions

    Bring a large pot of salted water to a boil. Add the 8 oz rotini and cook until al dente, about 10-12 minutes. Reserve 1/2 cup pasta water, then drain.

    While pasta cooks, heat the 2 tbsp olive oil in a large skillet over medium. Add the 1 sliced onion and cook until soft and golden, about 6-8 minutes.

    Add the 2 minced garlic cloves and 1 tsp dried Italian herbs. Cook until fragrant, about 1 minute, stirring constantly.

    Pour in the 1 can crushed tomatoes and bring to a simmer. Cook until slightly thickened, about 5 minutes. Season with salt and pepper to taste.

    Add the drained pasta to the sauce, tossing to coat. If too thick, add reserved pasta water a splash at a time until saucy. Serve hot, garnished with extra herbs if desired.
