Tomato Sauce Pasta with Vegetables

Ingredients
- 8 oz rotini pasta
- 2 tbsp olive oil
- 1 medium onion
- 2 cloves garlic
- 1 can (15 oz) canned crushed tomatoes
- 1 tsp dried Italian herbs

Bring a large pot of salted water to a boil. Add the 8 oz rotini and cook until al dente, about 10-12 minutes. Reserve 1/2 cup pasta water, then drain.

While pasta cooks, heat the 2 tbsp olive oil in a large skillet over medium. Add the 1 sliced onion and cook until soft and golden, about 6-8 minutes.

Add the 2 minced garlic cloves and 1 tsp dried Italian herbs. Cook until fragrant, about 1 minute, stirring constantly.

Pour in the 1 can crushed tomatoes and bring to a simmer. Cook until slightly thickened, about 5 minutes. Season with salt and pepper to taste.

Add the drained pasta to the sauce, tossing to coat. If too thick, add reserved pasta water a splash at a time until saucy. Serve hot, garnished with extra herbs if desired.
