Ingredients

  • 1 loaf baguette
  • 3 tbsp olive oil
  • 3 medium tomatoes
  • 8 oz mozzarella cheese
  • ¼ cup pesto
  • ½ tsp salt
  • ¼ tsp black pepper

    Preheat your oven's broiler. Slice the 1 baguette diagonally into 12 slices about 1/2 inch thick.

    Brush both sides of each bread slice with 2 tbsp of the olive oil. Place them on a baking sheet.

    Broil the bread for 1-2 minutes per side until golden and crisp. Watch closely to avoid burning.

    Dice the 3 tomatoes and toss with the remaining 1 tbsp olive oil, 0.5 tsp salt, and 0.25 tsp black pepper in a bowl.

    Slice the 8 oz mozzarella into 1/4 inch thick pieces. Place one slice on each toasted bread piece.

    Spoon the tomato mixture over the cheese, dividing evenly among the slices.
