Ingredients
- 14 oz firm tofu
- 2 medium green bell peppers
- 8 oz mushrooms
- 3 cloves garlic
- 3 tbsp soy sauce
- 3 tbsp vegetable oil
- 1 tbsp cornstarch
- 1 cup water

Press the 14 oz tofu for 10 minutes, then cut into 1-inch cubes. Toss with 1 tbsp cornstarch and a pinch of salt.

Heat 2 tbsp vegetable oil in a large skillet over medium-high. Add tofu in a single layer and cook until golden on all sides, about 8 minutes. Remove to a plate.

Add 1 tbsp oil to the skillet. Stir in 3 minced garlic cloves and cook until fragrant, about 30 seconds.

Add 2 sliced green peppers and 8 oz sliced mushrooms. Stir-fry until peppers are crisp-tender, about 5 minutes.

Return tofu to the skillet. Pour in 3 tbsp soy sauce and 1 cup water. Stir and simmer until sauce thickens, about 2 minutes. Serve hot.
