Ingredients
- 14 oz firm tofu
- 3 cups broccoli florets
- 4 cups baby spinach
- 1 medium onion
- 3 cloves garlic
- 3 tbsp soy sauce

Press the 14 oz tofu between paper towels for 5 minutes, then cut into 1-inch cubes. Slice the 1 onion and mince the 3 garlic cloves.

Heat 2 tbsp vegetable oil in a large skillet over medium-high. Add the tofu cubes and cook until golden on all sides, about 8 minutes. Remove to a plate.

In the same skillet, add the sliced onion and 3 cups broccoli florets. Stir-fry until the broccoli is bright green and crisp-tender, about 5 minutes.

Add the minced garlic and cook for 30 seconds until fragrant. Return the tofu to the skillet.

Add the 4 cups spinach and 3 tbsp soy sauce. Toss until the spinach wilts and everything is coated, about 2 minutes. Serve hot.
