Ingredients
- 1 whole bagel, split
- 1 whole eggs
- ½ whole avocado
- 1 slice cheddar or Swiss cheese, sliced
- 1.5 cups arugula
- ½ whole lemon (juiced)
Instructions
- 1
Toast the bagel halves in a toaster or oven until golden and crispy, about 3–4 minutes.
- 2
Heat 1 tbsp oil in a small skillet over medium. Crack the egg into the pan and cook until whites set but yolk still jiggles, ~4 minutes.
- 3
While the egg cooks, toss arugula with a pinch of salt, pepper, and half the lemon juice.
- 4
Slice the avocado and squeeze the remaining lemon juice over it to prevent browning.
- 5
Place the cheese slice on one toasted bagel half. Top with the fried egg.
- 6
Layer the avocado on top of the egg, then cap with the second bagel half. Serve immediately with the arugula salad on the side.
