Ingredients

  • 1 can (13.5 oz) canned coconut milk (full-fat)
  • 3 tbsp granulated sugar
  • 1 cup cooked mung beans (canned or homemade)
  • ⅓ cup small tapioca pearls (uncooked)
  • 2 cups water
  • ½ tsp pandan extract (or vanilla extract)
  • 3 cups ice
  • ¼ tsp salt

Instructions

    Boil water in a saucepan. Stir in tapioca pearls and simmer 10 minutes, stirring occasionally, until translucent.

    Drain tapioca and set aside to cool. Drain and rinse mung beans; set aside.

    Pour coconut milk into a bowl. Stir in sugar, pandan extract, and salt until sugar dissolves.

    Fill two tall glasses halfway with crushed ice.

    Layer mung beans and cooled tapioca evenly into each glass, then pour coconut milk mixture on top.

    Stir before drinking, breaking up layers as you sip.
