Ingredients

  • 1 lb ground pork
  • 2 cups cooked jasmine rice
  • 2 large eggs
  • 2 tbsp fish sauce
  • 1 whole lime
  • ¼ cup fried shallots

Instructions

    Heat a large skillet over medium-high heat. Add the 1 lb ground pork and cook, breaking it up with a spoon, until browned and cooked through, about 6-8 minutes.

    Stir in the 2 tbsp fish sauce and the juice of 1 lime. Cook for 1 minute, until the liquid is mostly absorbed and the pork is glossy.

    In a separate nonstick skillet, heat a little oil over medium-high. Crack the 2 eggs and fry until the whites are set and the edges are crispy, about 3 minutes.

    Divide the 2 cups cooked rice between two bowls. Top with the pork, a fried egg, and sprinkle with the 1/4 cup fried shallots. Serve immediately.
