Ingredients
- ¾ lb large prawns, peeled and deveined
- 5 cloves garlic, minced
- 3 tbsp butter
- 1 whole lime (zested + juiced)
- 1.5 cups coconut rice, cooked
- 6 oz broccolini

Pat prawns dry with paper towels. Season with salt and pepper on both sides.

Heat 1 tbsp butter in a large skillet over medium-high until foaming, ~60 seconds.

Sear prawns 90 seconds per side without moving. Surface should turn opaque pink.

Push prawns to the side. Add remaining 2 tbsp butter and minced garlic, cook 30 seconds until fragrant.

Toss broccolini and lime zest with the prawns and butter. Sauté 2 minutes until broccolini chars slightly.
