Ingredients

  • 2 lbs chicken wings, drumettes and flats separated
  • 6 cloves garlic cloves, minced
  • 3 whole Thai red chilies, sliced
  • 3 tbsp fish sauce
  • 2 tbsp palm sugar (or brown sugar)
  • 2 tbsp lime juice
  • 1 tbsp soy sauce
  • 2 tbsp vegetable oil
  • ¼ cup fresh cilantro, chopped
  • 1 whole lime wedges
  • 2 tbsp crushed peanuts

Instructions

    Preheat oven to 400°F. Pat chicken wings dry with paper towels and arrange on a large baking sheet lined with foil.

    In a small bowl, whisk together fish sauce, palm sugar, lime juice, and soy sauce until sugar dissolves.

    Heat vegetable oil in a small skillet over medium heat. Add minced garlic and sliced Thai chilies, sauté for 1-2 minutes until fragrant.

    Pour the garlic-chili oil into the fish sauce mixture and stir well to combine.

    Brush the glaze evenly over all chicken wings, turning to coat both sides.

    Bake for 30-35 minutes, stirring and basting wings halfway through, until golden and cooked through.

    Transfer wings to a serving plate and garnish with fresh cilantro, crushed peanuts, and a squeeze of lime juice.
