Ingredients
- 14 oz paneer cheese, cut into 1-inch cubes
- 2 medium bell peppers (red, yellow, or green), cut into 1-inch pieces
- 1 medium red onion, cut into 1-inch pieces
- 3 tbsp olive oil
- 1.5 tsp garam masala
- ½ tsp cumin
- 1 pinch salt and black pepper to taste

Pat paneer dry with paper towels. Pat vegetables dry as well.

Heat 1 tbsp oil in a 12-inch cast-iron skillet or tawa over medium-high until it shimmers, ~90 seconds.

Sear paneer cubes in batches without stirring, 2 minutes per side, until golden-brown on edges. Transfer to a plate.

Add remaining 2 tbsp oil to the skillet. Stir in garam masala and cumin; let bloom 30 seconds until fragrant.

Add peppers and onion. Cook, stirring occasionally, until charred at edges and tender-crisp, ~6 minutes.

Return paneer to the skillet. Toss gently to combine. Season with salt and pepper. Cook 1 minute more.
