Ingredients

  • 1 lb shrimp, peeled and deveined
  • ½ cup plain yogurt
  • 2 tbsp tandoori spice blend
  • 1 tbsp lemon juice
  • ¼ cup mango chutney
  • ½ medium red onion, thinly sliced
  • ½ tsp salt
  • 1 tbsp vegetable oil

Instructions

    In a bowl, combine the 1 lb shrimp, 1/2 cup yogurt, 2 tbsp tandoori spice, 1 tbsp lemon juice, and 1/2 tsp salt. Stir to coat evenly. Let marinate for 10 minutes.

    Heat 1 tbsp vegetable oil in a large skillet over medium-high heat. Add the shrimp in a single layer, working in batches if needed to avoid crowding.

    Cook the shrimp for 2-3 minutes per side, until they turn pink and opaque and are lightly charred at the edges.

    Remove the shrimp to a plate. Serve hot with 1/4 cup mango chutney and 1/2 sliced red onion on the side.
