Ingredients

- 2 sheets nori sheets
- 3 large eggs
- 1 tbsp sugar
- 1 tsp soy sauce
- 2 tbsp pickled ginger

Cook 1 cup sushi rice according to package directions, then let it cool slightly while you make the omelet.

In a bowl, whisk 3 eggs with 1 tbsp sugar and 1 tsp soy sauce until well combined.

Heat a lightly oiled skillet over medium. Pour in a thin layer of egg, cook until just set, then roll it to one side. Repeat with remaining egg, rolling into a log. Let cool, then slice into strips.

Place a nori sheet on a bamboo mat or clean surface. Spread half the rice over the nori, leaving a 1-inch border at the top.
