Ingredients

  • 1 cup long-grain white rice
  • ½ cup plain yogurt
  • ½ cup cucumber, grated or finely diced
  • ¾ tsp turmeric powder
  • ¾ cup mixed vegetables (carrots, peas, or bell pepper, diced small)
  • ¼ medium red onion, thinly sliced
  • 1 tbsp fresh lime juice

Instructions

    Make raita: stir yogurt, grated cucumber, lime juice, and a pinch of salt together in a bowl. Chill.

    Pickle the onion: toss sliced red onion with 1 tbsp lime juice and a pinch of salt. Set aside.

    Heat 2 tbsp oil in a large skillet over medium heat. Add diced vegetables and sauté until tender, ~4 minutes.

    Add turmeric, stir for 30 seconds until fragrant, then add rice and stir to coat evenly.

    Pour 2 cups water into the skillet, bring to a boil, then lower heat, cover, and simmer until rice is tender, ~12 minutes.

    Fluff the rice with a fork. Serve warm with raita, pickled onions, and sliced cucumbers and carrots on the side.
