Ingredients

  • 1 lb ground beef
  • 1 oz taco seasoning
  • 8 small flour tortillas
  • 2 cups shredded cheddar cheese
  • ½ cup milk
  • 1 cup diced tomatoes

Instructions

    In a skillet over medium-high heat, cook the 1 lb ground beef, breaking it up, until browned and no longer pink, about 8 minutes. Drain excess fat.

    Stir in the 1 oz taco seasoning and 1/4 cup water. Simmer until thickened, about 2 minutes.

    In a small saucepan over medium heat, combine the 2 cups shredded cheddar cheese and 1/2 cup milk. Stir constantly until melted and smooth, about 3 minutes.

    Warm the 8 tortillas in a dry skillet or microwave. Fill each with the beef mixture, drizzle with cheese sauce, and top with the 1 cup diced tomatoes and chopped cilantro if desired.
