Ingredients

  • ½ lb beef eye of round, thinly sliced
  • 1 medium white onion, thinly sliced
  • 8 count corn tortillas
  • ¼ cup fresh cilantro, chopped
  • 1 whole lime, cut into wedges
  • 1 pinch salt and pepper to taste

Instructions

    Heat 1 tbsp oil in a large skillet over medium-high until it shimmers, ~90 seconds.

    Add onion slices and cook, stirring occasionally, until golden and soft, ~8 minutes.

    Push onions to the side. Add beef in a single layer and cook without stirring for 2 minutes.

    Stir beef and onions together, cooking until beef is browned and edges crisp, ~4 minutes.

    Season generously with salt and pepper. Warm tortillas in a dry skillet 30 seconds per side.
