Ingredients
- 1.5 lbs pre-cooked pork ribs (about 1.5 lbs)
- 3 tbsp soy sauce
- 2 tbsp brown sugar
- 1 tbsp white vinegar
- 2 medium red onions, halved
- 1.5 cups mashed potatoes (frozen, store-bought, or prepared)
- 1 tbsp fresh ginger, minced

Stir soy sauce, brown sugar, vinegar, and ginger together in a small bowl until sugar dissolves.

Heat oil in a 12-inch skillet over medium-high until it shimmers, about 90 seconds.

Sear ribs in batches without moving, 2–3 minutes per side until edges are golden and charred.
