Ingredients

  • 1.5 lbs pre-cooked pork ribs (about 1.5 lbs)
  • 3 tbsp soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp white vinegar
  • 2 medium red onions, halved
  • 1.5 cups mashed potatoes (frozen, store-bought, or prepared)
  • 1 tbsp fresh ginger, minced

Instructions

    Stir soy sauce, brown sugar, vinegar, and ginger together in a small bowl until sugar dissolves.

    Heat oil in a 12-inch skillet over medium-high until it shimmers, about 90 seconds.

    Sear ribs in batches without moving, 2–3 minutes per side until edges are golden and charred.

    Pour glaze over ribs and stir to coat evenly. Cook 2 minutes, tossing gently, until syrupy and tacky.

    Push ribs to the side. Add onion halves cut-side down and sear 3–4 minutes until charred and soft.

    Warm mashed potatoes in the microwave or separately. Plate potatoes, top with glazed ribs and crispy onions.
