Ingredients
- 2 medium sweet potatoes
- 4 slices bacon
- 2 large eggs
- 2 cups baby spinach or arugula
- 2 tbsp olive oil
- 1 to taste salt and black pepper

Dice the 2 sweet potatoes into 1/2-inch cubes. Cook the 4 bacon slices in a large skillet over medium heat until crisp, about 6 minutes. Remove bacon, leaving 1 tbsp drippings in the pan.

Add the 2 tbsp olive oil and sweet potato cubes to the skillet. Season with salt and pepper. Cook over medium-high, stirring occasionally, until golden and tender, about 10 minutes.

Crumble the bacon and add it back to the skillet along with the 2 cups spinach or arugula. Stir until greens are just wilted, about 1 minute.
