Ingredients

  • 2 medium sweet potatoes
  • 4 slices bacon
  • 2 large eggs
  • 2 cups baby spinach or arugula
  • 2 tbsp olive oil
  • 1 to taste salt and black pepper

Instructions

    Dice the 2 sweet potatoes into 1/2-inch cubes. Cook the 4 bacon slices in a large skillet over medium heat until crisp, about 6 minutes. Remove bacon, leaving 1 tbsp drippings in the pan.

    Add the 2 tbsp olive oil and sweet potato cubes to the skillet. Season with salt and pepper. Cook over medium-high, stirring occasionally, until golden and tender, about 10 minutes.

    Crumble the bacon and add it back to the skillet along with the 2 cups spinach or arugula. Stir until greens are just wilted, about 1 minute.

    Make 2 wells in the hash and crack 1 egg into each. Cover and cook until whites are set but yolks are still runny, about 3 minutes. Season with extra pepper and serve.

    Serve hot directly from the skillet or divide between plates.
