Preheat oven to 400°F. Peel and dice the 2 sweet potatoes into 1/2-inch cubes. Trim the ends off the 8 oz green beans and cut into 2-inch pieces.

In a large bowl, toss the sweet potato cubes and green beans with 2 tbsp olive oil, 1/2 tsp salt, and 1/4 tsp black pepper. Spread on a baking sheet in a single layer.

Roast for 20-25 minutes, until the sweet potatoes are tender and lightly browned, stirring once halfway.

While vegetables roast, cook the 4 bacon slices in a skillet over medium heat until crispy, about 6-8 minutes. Transfer to paper towels, then crumble into bits.

Core and dice the 1 large apple into 1/2-inch pieces. In a large bowl, combine the roasted vegetables, apple, crumbled bacon, and 1 cup breadcrumbs. Toss well.
