- 3 tbsp sugar
- ¼ tsp salt
- 2 tbsp butter
- 1.5 cups ricotta cheese
- 1 tsp vanilla extract

In a blender, combine 1 cup flour, 1.5 cups milk, 2 eggs, 1 tbsp sugar, 1/4 tsp salt, and 1 tbsp melted butter. Blend until smooth, about 30 seconds.

Heat a 9-inch nonstick skillet over medium heat. Add a small pat of butter and swirl to coat. Pour in 1/4 cup of batter, tilting to cover the bottom.

Cook the crepe until the edges look dry and the bottom is golden, about 1-2 minutes. Flip and cook for another 30 seconds. Repeat with remaining batter, stacking crepes on a plate.

Place a crepe on a plate, spoon 2-3 tbsp of filling along the center, and roll it up like a burrito. Repeat with all crepes.
