Ingredients
- 4 sub rolls
- 12 oz deli turkey or ham
- 2 cups lettuce
- 2 medium tomato
- 1 large carrot
- ½ cup pickles
- 1 small onion
- ¼ cup mayonnaise
Instructions
- 1
Slice the 4 sub rolls lengthwise, but not all the way through, and open them like a book. Spread 1 tbsp of the 1/4 cup mayonnaise on each cut side.
- 2
Layer the 12 oz deli meat evenly among the 4 rolls, folding the slices to fit the bread.
- 3
Top the meat with the 2 cups shredded lettuce, 2 sliced tomatoes, 1 shredded carrot, 1/2 cup sliced pickles, and 1 thinly sliced onion, distributing evenly.
- 4
Close the sandwiches and press down gently. If you like, toast the assembled subs in a skillet over medium heat for 2-3 minutes per side until the bread is golden and crisp.
- 5
Cut each sub in half crosswise and serve immediately.
