- ½ cup water
- ½ tsp salt
- ½ lb shrimp
- 4 oz ham
- 4 oz cheese
- 1 tbsp butter
- 2 tbsp fresh herbs

In a bowl, mix 1 cup tapioca starch, 0.5 cup water, and 0.5 tsp salt until it forms a crumbly dough. Let it rest for 5 minutes.

Heat a non-stick skillet over medium heat. Sprinkle half the tapioca mixture evenly into the pan, pressing down gently. Cook until the crepe firms up and edges lift, about 2-3 minutes.

Flip the crepe and cook for another 1-2 minutes until it's set but still pliable. Remove and repeat with the remaining mixture to make a second crepe.

In the same skillet, melt 1 tbsp butter over medium heat. Add 0.5 lb shrimp and cook until pink and opaque, about 3-4 minutes. Season with a pinch of salt.

Place one crepe on a plate. Layer with half the cooked shrimp, 2 oz ham, and 2 oz cheese. Fold the crepe over the filling.
