Ingredients
- 2 cups all-purpose flour
- ½ cup unsalted butter
- ½ cup brown sugar
- 1 large egg
- ¼ cup corn syrup
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- ½ teaspoon salt

In a large bowl, mix 2 cups flour, 1 tsp baking powder, 1 tsp cinnamon, and 1/2 tsp salt. Set aside.

In a separate bowl, cream 1/2 cup softened butter with 1/2 cup brown sugar until light. Beat in 1 egg and 1/4 cup corn syrup until smooth.

Gradually stir the flour mixture into the wet ingredients until a soft dough forms. Cover and let rest for 15 minutes.

Preheat a waffle iron to medium-high. Roll dough into 1-inch balls and place one in the center of the iron. Close and cook until golden and crisp, about 2-3 minutes.

While still warm, slice each waffle horizontally with a sharp knife to create two thin layers. Spread a spoonful of caramel sauce (or honey) between the layers and press together.

Repeat with remaining dough. Serve warm for the best gooey texture, or let cool for a crispier cookie.
